Arugula is high in vitamin C and potassium with a peppery flavor that is a perfect balance when tossed with a balsamic vinegar and parmesan cheese. They can be grown indoors at any time of the year and a nutrient-packed "green fix" in the winter. Move containers as needed for light exposure and temperature and harvest when 2 - 4 inches tall.
