Romanesco Broccoli is a unique type of broccoli which produces bright green, whorled heads that resemble cauliflower. This is widely grown in Northern Italy and matures in 75-100 days. Romanesco can be enjoyed raw, however, lightly cooking it allows it to retain the structure and nutty taste it is known for.
